I really love the wonderful New Year’s holidays … The glitter of Christmas tree garlands, many, many bright toys on the Christmas tree, a bouquet of aromas in the kitchen, the smell of tangerines, the familiar melodies of New Year’s and Christmas songs … I think over the menu of these delightful holidays in advance. After preparing the most delicious festive pastries, it’s time to start making a magical delicacy – the Christmas log chocolate-curd cake roll.

Ingredients

  • for dough: Flour 100 g.
  • cocoa powder 2 tablespoon
  • sugar 150 g
  • starch 2 tablespoon
  • baking powder 1 teaspoon
  • for cream: cottage cheese 200 g.
  • icing sugar 3 tablespoon. l.
  • cream 2 tablespoon. l.
  • for chocolate cream: chocolate 200 g.
  • butter 100 g.
  • powdered sugar 1 tablespoon. l.

Instructions

  1. Separate the whites from the yolks. Mash the yolks with 100 g of sugar, add sifted flour mixed with starch, cocoa, baking powder and mix well so that there are no lumps. Whisk the egg whites with the remaining sugar into a thick foam and gently add them to the dough.
  2. Pour the biscuit dough onto baking paper. Bake the biscuit for 10-15 minutes at 180 degrees. Transfer the finished biscuit to a sheet of parchment. Turn over again onto a damp towel. Carefully wrap in a roll directly with a towel, leave to lie for 5 minutes, unwind.
  3. Cream: Beat cottage cheese well with powdered sugar. Add cream. Grease the biscuit with cream, roll tightly.
  4. Chocolate cream: Melt butter in a water bath, add chopped chocolate, powdered sugar.
  5. Cool the cream and apply to the roll. Cut off one edge with a straight cut or slightly obliquely. And with the help of a cream, glue them to the main “log”. Use a fork to make a pattern, sprinkle with powdered sugar.
  6. Decorate the surface of the log to your liking. Store the log in the refrigerator until serving.
