Cake “Strawberry Basket”

A very bright, cozy, and mouth-watering strawberry cake based on a sponge cake base with yogurt cream. Cake “Strawberry basket” is a great option for a sweet gift.

Ingredients

  • Strawberry – 300 g
  • Flour – 35 g
  • Starch – 15 g
  • Sugar – 50 g for biscuit + 100 g for cream
  • Eggs – 2 pcs.
  • Natural yogurt – 400 ml
  • Gelatin – 10 g

Directions

  1. We prepare the ingredients for the Strawberry Basket cake.
  2. We separate the egg whites from the yolks, use a mixer to bring the whites to a state of a fluffy and light foam.
  3. Mix the yolks with sugar (50 grams), make the mass light and homogeneous.
  4. Combine both egg masses.
  5. Add the recommended amount of sifted wheat flour and starch.
  6. Mix the components with gentle movements (using a silicone spatula).
    We spread the biscuit dough on baking paper in a thin rectangular layer, 35-40 cm long and 20-25 cm wide.
  7. We bake in a preheated oven at 180 degrees for 15-20 minutes.
    We cut the finished biscuit cake with a thin knife into two parts, roll each into a roll, having previously laid it on a kitchen (wet) towel. This will give the biscuit the desired shape. We leave to cool.
  8. We mix yogurt and 100 g of sugar.
  9. Pour boiling water over the gelatin, stir the mixture, cool slightly, and add to the yogurt.
  10. Cut 1/3 of the strawberries into small pieces and add to the yogurt mass.
  11. We cover the form with cling film, lay out the pieces of biscuit. Fill with yogurt and strawberry cream.
    Cool the biscuit cake with strawberries for 3-5 hours.
  12. Decorate the cake with the remaining strawberries.
  13. Putting the “Strawberry Basket” cake in a suitable box and decorating it with a bright ribbon, you can present a sweet dessert to your family or friends.
