Ingredients

  • Chicken fillet – 1 pc.
  • Canned pineapples – 3-4 rings
  • Orange – 1 pc.
  • Garlic – 1 clove
  • Dry mint – 3 branches
  • Seasoning for meat – to taste
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – for frying

Instructions

  1. Season the chicken fillet with salt, black pepper, and meat seasoning.
  2. Heat vegetable oil in a frying pan over medium-high heat. Add the crushed garlic clove and dry mint sprigs and heat for about 1 minute to infuse the oil with flavor.
  3. Place the seasoned chicken fillet in the pan and fry for 3-5 minutes on each side until golden brown.
  4. Remove the garlic and mint sprigs. Transfer the chicken fillet to a baking dish and bake in a preheated oven at 180°C (356°F) for 20 minutes until the internal temperature reaches 74°C (165°F).
  5. While the chicken bakes, peel the orange and remove the white pith. Separate the segments and roughly dice the pieces.
  6. Once the chicken has cooled, cut it into cubes.
  7. Cut the canned pineapple rings into pieces.
  8. Thread the skewers by alternating pineapple pieces, orange pieces, and chicken cubes, starting with pineapple and ending with chicken.
