Ingredients

  • 150 grams sugar
  • 25 g water
  • 75 ml cream
  • 750 g low-fat quark

Instructions

  1. Pour sugar and water into a large saucepan. Cook over high heat for 5-7 minutes until the water evaporates and the sugar turns light amber.
  2. Remove from heat. Carefully add the cream (it will steam vigorously).
  3. Return the pan to the stove over low heat. Stir constantly for 2-3 minutes until the caramel is deep golden brown.
  4. Remove from heat and let cool for 10-15 minutes, stirring every 2-3 minutes to prevent lumps from forming.
  5. Stir in the quark until well combined.
  6. Refrigerate for 2 hours before serving.
  7. For a richer version, replace the low-fat quark with cream quark.
