Ingredients

  • 500 g apples (approx. 5 pieces)
  • 200 ml apple juice
  • 50 grams sugar
  • 15 g butter
  • 50 g raisins
  • 0.5 teaspoon ½ cinnamon
  • some lemon juice
  • 1 vanilla pod, scraped out pulp
  • 1 pinch (s) salt
  • 1 shot rum (leave out for children course!)
  • some brittle or roasted almonds
  • powdered sugar

Instructions

  1. Peel the apples and remove the core. Cut into approx. 1 cm cubes, place in a bowl and drizzle with a little lemon juice. Stir every now and then so the apples don`t turn brown.
  2. Caramelize the butter and sugar together in a saucepan over moderate heat. Add the diced apples while stirring. It hisses strongly, but cannot burn on medium heat. After a few minutes, deglaze with the apple juice. Add cinnamon, raisins, vanilla pulp and salt and stir from time to time.
  3. After about 15-20 minutes, the juice is well reduced. Then take the pan off the stove and add the rum (otherwise the alcohol would boil off).
  4. Serve either cold or warm.
  5. Sprinkle the compote with brittle or roasted almonds and dust with powdered sugar.
