Ingredients

  • 1 kg apples
  • 4 medium egg (s), separated
  • 160 g butter
  • 2 ½ teaspoons salt
  • 8 tablespoon sugar
  • 325 grams flour
  • 2 teaspoons baking soda

Instructions

  1. Peel, core and quarter the apples and cut into 3 - 4 mm thin wedges.
  2. Mix the egg yolks with 2 teaspoons of salt, 3 tablespoons of sugar and soft butter until foamy. Mix the flour with the baking powder, sieve and stir into the egg mixture until a creamy dough is formed. Beat the egg whites with a pinch of salt until they are very stiff.
  3. Caramelize the remaining sugar in a coated pan. Steam the apple wedges in it.
  4. Fold the egg white snow and the steamed apple slices into the batter.
  5. Heat the fat in the pan in portions and gradually bake golden-brown pancakes from the batter. Keep warm in the preheated oven until they are all done.
  6. Arrange and serve the pancakes.
