Ingredients

  • 1 pineapple, ripe
  • 1 mango (s), ripe
  • 1 vanilla pod (s)
  • 30 ml rum
  • 50 ml water
  • 200 ml Cremefine, (or cream)
  • 1 packet vanilla sugar
  • 1 handful flaked almonds
  • 60 g suar

Instructions

  1. In the case of pineapples, remove the peel and the stalk and cut into cubes.
  2. Do the same with the mango, remove the peel and remove the stone, cut this into cubes as well. Toast the almond flakes.
  3. Beat Cremefine with vanilla sugar until stiff and add the rum to taste and chill.
  4. Scrape out the vanilla pod, boil the pulp and pod in a saucepan with the water (5-7 minutes) then remove the pod.
  5. Caramelize the sugar in a pan and add the pineapple and mango and sweat nicely.
  6. Finally, arrange the pineapple and mango nicely, pour the vanilla over them, add the whipped cream and decorate with the flaked almonds.
