Ingredients

  • 2 tablespoons oil
  • 1 large onion (s)
  • 1 kg carrot (s)
  • 1 kg potato (s), waxy
  • 1 can tomato (s), chunky
  • 1 can coconut milk
  • 1 packet herbs, (garden herbs) frozen
  • 250 ml milk
  • 5 sausages, smoked
  • 250 g cocktail tomatoes
  • 3 teaspoon vegetable stock, instant
  • salt and pepper
  • sugar
  • 1 teaspoon garlic paste

Instructions

  1. Chop the onion and sweat it in the oil. Dice carrots and potatoes, add and fry lightly. Deglaze with the coconut milk and the can of tomatoes, add garden herbs, chopped sausages and spices. Top up with the milk (as required) and simmer for about 15-20 minutes until the vegetables are soft. Halve the cocktail tomatoes and add them and let them cook slightly.
  2. Tastes best the next day.
