Ingredients

  • 250 g flour
  • 1 teaspoon Baking powder
  • 90 g suar
  • 1 pinch (s) salt
  • 80 g desiccated coconut
  • 130 ml coconut milk
  • 1 egg (s)
  • 50 ml oil
  • 200 g pineapple

Instructions

  1. Preheat the oven to 170 degrees.
  2. Mix the flour with baking powder, salt and coconut flakes. In another bowl, mix the coconut milk, egg and oil. Add the flour mixture to the coconut milk mixture and stir.
  3. Finally, cut the pineapple into small pieces and fold into the dough.
  4. Pour the batter into a muffin tray and bake for about 20-25 minutes.
