Caribbean Rice

For this dish, you need to cook rice and prepare garlic sauce separately.

Ingredients

  • Long grain rice – 1 cup
  • Fresh cilantro (chopped) – 1 bunch
  • Zest of one lime
  • One lime juice
  • Garlic (chopped) – 1 tbsp
  • Olive oil – 1 tbsp
  • Fresh chili pepper (finely chopped) – 1 pc.
  • Water – 2.25 cups

Directions

  1. Put cilantro, zest, garlic, chili into a bowl of a kitchen processor, pour the lime juice and olive oil, pulsate until smooth.
  2. Boil the rice until cooked until the liquid evaporates, according to the instructions on the package. Let rest at room temperature for 5 minutes, then loosen with a fork.
  3. Mix the rice with the garlic sauce and serve immediately.
