Ingredients

  • 3 cloves garlic
  • 0.5 teaspoon ½ coriander, roasted
  • 1 cube chicken broth
  • 1 piece (s) ginger, grated
  • 250 ml coconut milk
  • 60 ml water
  • 1 lime (s), grated zest or 5-6 lime leaves
  • 1 stalk lemongrass
  • 2 ring / s chilli pepper (s), pitted red, hot
  • 250 g shrimp, peeled
  • 1 handful basil, finely chopped

Instructions

  1. Bring all ingredients to a boil except for the shrimp and basil. Simmer for 15 minutes. Add shrimp and cook for 2-3 minutes. Remove the garlic, lemongrass and lime leaves. Serve the soup garnished with basil.
  2. I recommend Thai basil. Can be found in every Asian store. Instead of shrimp, chicken is also very good.
