Ingredients

  • 2 small kohlrabi
  • 2 carrot (s)
  • 1 sweet potato (s)
  • 200 g lentils, red
  • 400 ml coconut milk
  • 1 onion (s)
  • 1 clove garlic
  • 1 tablespoon curry powder, hot
  • a bit salt
  • some pepper
  • 1 pinch (s) Garam Masala
  • some vegetable stock, instant, without flavor enhancers

Instructions

  1. Cook the lentils according to the package instructions and add a little vegetable stock powder in the middle of the cooking time and season with two pinches of Garam Masala.
  2. Meanwhile, peel and chop the vegetables. Then sauté the onion and garlic with a little oil. Briefly sauté the kohlrabi, carrots and sweet potatoes and then deglaze with coconut milk and let cook. If you like it crunchier, add the carrots a little later. Season with approx. 1 - 2 tablespoons of hot curry powder. If you don`t like it that spicy, you can replace the spicy with normal curry powder. Then season with salt and pepper.
  3. At the end you can mix the vegetables with the lentils or serve both individually.
  4. Tip: If you have quite runny coconut milk, you can cook the lentils with less water so that they are not completely cooked. You then simply finish cooking them in the coconut milk. This makes it a little creamier.
