Ingredients

  • 260 g flour
  • 0.5 teaspoon ½ baking powder
  • 1 teaspoon baking soda
  • 60 g walnuts, chopped
  • 40 g desiccated coconut
  • 60 g raisins
  • 120 g apple, finely chopped
  • 1 egg (s)
  • 140 g suar
  • 80 ml vegetable oil
  • 1 teaspoon flavor (vanilla)
  • 240 g buttermilk
  • 200 g carrot (s), finely rated
  • 0.5 teaspoon ½ cinnamon

Instructions

  1. Beat the egg in a bowl and whisk gently. Then add the sugar, oil, flavoring, buttermilk and the carrots and mix well.
  2. Mix the flour, baking powder, baking soda, cinnamon, walnuts, desiccated coconut and the apple pieces carefully in another bowl.
  3. Add the dry ingredients to the wet ones and mix everything together. Pour the batter into a prepared muffin tin.
  4. Bake in a preheated oven at 180 ° C for about 20-25 minutes until golden.
