Carrot Buns with Raisins and Dried Apricots

Ingredients

For the dough:

  • Wheat flour – 340 g
  • Carrots – 150 g
  • Butter – 40 g
  • Sour cream 25% – 50 g
  • Yolk – 1 pc.
  • Water – 60 ml
  • Dry fast-acting yeast – 1 teaspoon
  • Sugar – 3 tbsp
  • Dried apricots – 60 g
  • Raisins – 40 g
  • Vanilla sugar – 8 g
  • Ground cinnamon – 2 g
  • Ground ginger – 2 g
  • Salt – 1/8 teaspoon

To fill:

  • Milk – 60 ml
  • Sugar – 1 tbsp
  • Butter – 20 g
  • Vanilla sugar – 8 g

Directions

  1. Prepare all the ingredients you need to make your carrot buns.
    Remove the butter from the refrigerator, it should become soft.
    Cook the carrots until soft (25-30 minutes) and cool.
    Sift the flour. Warm up the water a little (up to 37 degrees).
  2. Combine half of warm water with yeast. Stir until smooth and place in a warm place for 10 minutes.
  3. In a separate bowl, combine sour cream, 2 tablespoon. tablespoons of sugar, salt and yolk.
  4. Add water and yeast to the sour cream mixture and stir.
  5. Add 1 cup of sifted flour.
  6. Knead the dough. It will be sticky and it should be.
  7. Cover the dough and place in a warm place for 90 minutes. The dough should double in size.
  8. Pour raisins and dried apricots with hot water and leave for 5 minutes. Dry the dried fruit. Finely chop dried apricots.
  9. Punch boiled carrots with a blender. Add sugar (1 tablespoon), soft butter (40 g), vanilla sugar (8 g), cinnamon, ginger and the remaining water to the carrot puree. Stir.
  10. Add suitable yeast dough to the carrot mass and stir.
  11. Add raisins and dried apricots. Stir.
  12. Add the remaining flour.
  13. Knead a soft dough. Stir for 6 minutes.
  14. Cover the butter dough and place in a warm place for 1 hour. The dough should double in size.
  15. Turn on the oven and preheat to 180 degrees.
    Heat the milk, add sugar and butter (20 g). Stir until smooth and cool.
  16. Divide the dough into 9 equal pieces and roll into balls. Place the balls of dough in a baking dish with high sides, 2 cm apart.
  17. Pour the butter and milk mixture into the mold.
  18. Cover the buns and place in a warm place for 35 minutes.
  19. Bake carrot buns with raisins and dried apricots in a hot oven at 180 degrees for 25-30 minutes, until tender.
    Remove the buns from the oven and leave in the baking pan for 10 minutes, during which time the remaining liquid should be absorbed.
  20. Butter buns with carrots, dried apricots and raisins are ready, can be served with milk or tea.
