Ingredients

  • 500 g carrot (s)
  • 250 g potato (s)
  • 1 onion (s)
  • 1 piece (s) ginger
  • 2 tablespoons oil
  • 100 ml orange juice or pineapple juice
  • 0.75 liter ¾ vegetable stock
  • 125 g crème fraîche
  • soy sauce
  • salt and pepper
  • 1 bunch coriander greens

Instructions

  1. Roughly chop the onion and sauté in hot oil in a saucepan. Add potatoes and carrots, peeled and roughly chopped. Finely chop or grate the ginger, also add, sauté everything. Pour in the juice and stock, bring to the boil and simmer for 15 minutes. Mix the soup with the hand blender, stir in the creme fraiche and season with soy sauce, salt and pepper! Wash the coriander, shake dry, chop except for a few leaves and add to the soup. Garnish with the other coriander leaves.

  3. I always leave out the soy sauce and prefer to put it on the table for seasoning.
