Ingredients

  • 1 medium onion (s)
  • 1 shallot (s)
  • 1 clove garlic
  • 1 piece (s) ginger, cherry-sized
  • 1 kg carrot (s)
  • 500 ml vegetable stock
  • 500 ml beef broth
  • 150 ml coconut milk
  • some olive oil
  • salt
  • baguette (s)

Instructions

  1. Peel and dice the onion, shallot, garlic and ginger and fry in a little olive oil in a suitable saucepan. Clean the carrots, cut into thin slices and fry them briefly. Add the vegetable and beef broth. The whole thing should cook for 15 minutes. Take the pot off the stove and puree the soup with a hand blender. Then add the coconut milk and finally season with salt.
  2. Baguette goes well with this and can be soaked in small pieces on the soup plate. If you don`t like it, you can of course eat it with it.
