Carrot Salad with Ginger, Nuts and Raisins

Sometimes I want to cook something simple, but not quite :), so that all the products are at hand, and so that the whole family will appreciate it. Here I found in my culinary notebook such a simple recipe from carrots, raisins and nuts. And the carrot salad with raisins and ginger is dressed with citrus dressing. I only needed to buy ginger, but this is not a problem these days. All my family members were satisfied.

Carrot Salad with Ginger, Nuts and Raisins Ingredients

  • Golden raisins – 140 g (1 glass)
  • Carrots (preferably young) – 400 g
  • Salt to taste
  • Honey or sugar – 0.5 teaspoon.
  • Walnut (chopped) – 50 g

For refueling:

  • Ginger – 5 cm
  • Lemon – 1 pc.
  • Orange – 1 pc.
  • Sour cream or natural yogurt – 225 g (1 glass)

Carrot Salad with Ginger, Nuts and Raisins Instructions

  1. Boil some water in a kettle. Put the raisins in a small bowl, pour boiling water over and set aside.
  2. Peel and rub the ginger on a fine grater.
  3. With 1/2 orange and 1/2 lemon, remove the zest and squeeze the juice, transfer to a plate with ginger. Add sour cream. Mix. Set the gas station aside.
  4. Peel the carrots and grate them on a coarse grater. Transfer to a serving bowl.
  5. Drain the water from the raisins, pour into the carrots. Add honey and salt. Pour with dressing, sprinkle with carrot salad with ginger nuts.
