Ingredients

  • 250 g carrot (s), peeled, cut into pieces
  • 1 onion (s)
  • 1 leek, cut into rings
  • 1 tablespoon flour
  • 500 ml vegetable stock
  • 0.5 ½ cup cream
  • salt and pepper
  • 1 bunch parsley, fresh, finely chopped
  • 3 tablespoon oil (olive oil or any other)

Instructions

  1. Cut the onion into small pieces and fry in the oil, put the carrot pieces and leek rings in the pan, fry for a short time. Dust with the flour, stir and then deglaze with the vegetable stock. Let simmer for about 20-25 minutes. Then mix the soup well with a hand blender, add the cream, salt and pepper. Finally sprinkle the parsley over it.
