Ingredients

  • 100 g beans, white
  • 0.5 liter ½ water
  • 40 g lard
  • 1 onion (s), diced
  • 250 g soup meat (beef)
  • 1 kg carrot (s), cut into small pieces
  • 750 g potato (s), diced
  • 0.25 liter ¼ water
  • 250 g apples, diced
  • salt and pepper
  • 1 bunch soup vegetables, cleaned, cut into small pieces

Instructions

  1. The selected, washed beans are soaked in 1/2 liter of water for approx. 12 - 24 hours. Then bring the soaking water to the boil and cook on a low flame for 1 ½ to 2 hours until soft (you can of course take beans out of the can, but my grandma didn`t have them!).
  2. Wash the meat, pat dry and cut into small cubes. Heat the fat in a second saucepan over a high flame and add the meat with the bones. Brown it briefly. Just before the meat is browned enough, add the diced onion and the washed, finely chopped soup vegetables and heat everything briefly. Then add the cleaned, sliced carrots, the peeled, diced potatoes and the peeled, diced apples.
  3. Now pour 1/4 liter of water over it. Bring everything to the boil and cook on a low flame for approx. 1 hour without stirring. No steam should escape from the pot.
  4. At the end, season to taste and now add the white beans.
  5. Serve immediately.
