Ingredients

  • 400 g carrot (s)

  • water
  • 1 onion (s)
  • 2 cloves garlic)
  • 100 g low-fat quark
  • 1 ½ vegetable stock cube
  • 1 ½ teaspoon herbal salt
  • 2 teaspoons pepper
  • some nutmeg
  • some herbs

Instructions

  1. Wash, peel and cut the carrots and potatoes. Peel the onion and garlic and cut into pieces.
  2. Put everything together in a saucepan and fill up with water. Add the stock cubes and simmer for about 20 - 30 minutes. Meanwhile, you can add a little nutmeg if you like.
  3. When everything is well cooked, season with salt and pepper and add the low-fat quark to make it a little creamier. Alternatively, you can also use cream cheese or coconut milk, which is also very tasty!
  4. Puree with the hand blender or in a blender! Season to taste and, if necessary, season. Finally, some herbs about it.
  5. Also tastes delicious with shrimp just stir in at the end. You can also mix other types of vegetables - whatever your heart desires and what tastes good
