Ingredients

For the dough:

  • 250 g flour
  • 100 g butter
  • 1 teaspoon salt
  • 1 tablespoon vinegar
  • 100 ml water

For the cast:

  • 200 g cream
  • 4 medium egg (s)
  • salt
  • Pepper, freshly ground
  • Nutmeg, grated
  • 100 g cheese, rated

For covering:

  • 500 g cauliflower
  • 500 g broccoli
  • 200 g cooked ham, or smoked pork, diced
  • salt

Instructions

  1. For the dough, put the flour in a bowl, add the butter and salt and mix with a knife, further breaking up the pieces of butter. Mix the water with the vinegar, add to the flour and butter mixture and quickly knead into a smooth dough. Wrap the dough in cling film and refrigerate for at least 1/2 hour.
  2. For the topping, whisk all ingredients together well, dose the spices according to your personal taste, finally stir in the cheese.
  3. Wash and clean the vegetables and cut into florets. Cut the stems into slices. Blanch in boiling salted water for 5 minutes, pour into a colander and drain well.
  4. Roll out the dough, line a 28 cm diameter mold with it and form an edge of approx. 3 cm. Prick the bottom several times with a fork. Put the vegetables in the mold, spread the boiled ham or smoked pork on top and pour the glaze over them.
  5. Cook at 200 ° C in a preheated oven for approx. 40 minutes, then leave to rest for 10 minutes with the oven door open.
  6. For a vegetarian quiche, you just leave out ham or smoked pork.
