Cauliflower, Minced Meat and Zucchini Casserole

Zucchini, cauliflower, and between them minced meat with onions, tomatoes, and basil. All this is soaked in a filling of cream and eggs, and on top is a ruddy cheese crust. The casserole not only looks appetizing but also turns out to be hearty and delicious!

Ingredients

  • Minced pork – 250 g
  • Cauliflower – 250 g
  • Zucchini – 200 g (1 pcs.)
  • Tomato – 120 g (1 pcs.)
  • Onions – 50 g (0.5 pcs.)
  • Cream, 20% fat – 100 ml
  • Hard cheese – 30 g
  • Eggs – 2 pcs.
  • Garlic – 1 clove
  • Hot green pepper – 3-4 rings (to taste)
  • Fresh basil – 10 g (4-5 sprigs)
  • Green onions – 20 g (5-6 feathers)
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – 4 tbsp

Directions

  1. Pour 1 liter of water into a saucepan, bring to a boil, and salt. Divide the cauliflower into inflorescences and send to boiling water. Bring to a boil and simmer over medium heat for 5 minutes.
  2. Meanwhile, cut off the ends of the zucchini and cut it into slices about 1 cm thick (I have 0.7 cm). Pour 2 tablespoon into the pan. tablespoons of vegetable oil and heat over medium heat. Put the zucchini slices in one layer and fry on both sides for 2-3 minutes. Then transfer them to a plate. Remove cauliflower from heat and discard in a colander.
  3. Peel and finely chop onions and garlic. Pour the remaining oil into the pan in which the zucchini were fried and add the onion and garlic.
  4. Saute the onions and garlic for 5 minutes. Peel hot peppers, chop finely, and add to the pan. Stir. Add the minced pork to the skillet.
  5. Cut the tomato into small cubes and put it in a frying pan with onions and minced meat, salt. If you wish, you can remove the skin from the tomato (make a cross-shaped cut on the tomato, dip it in boiling water for a few minutes, then pour it over with ice water and remove the skin).
  6. Stir the contents of the pan and fry over medium heat for 10 minutes, until the liquid evaporates. Turn on the oven to heat up to 180 degrees. Remove skillet from heat. Finely chop the basil, put it in the pan, and stir everything.
  7. Put the fried zucchini with an overlap in a baking dish (mine is 15×22 cm). Place the fried minced meat on top and smooth.
  8. Lay the cauliflower inflorescences on top of the meat layer. Finely chop the green onion and sprinkle with the cauliflower.
  9. Pour the cream into a bowl, beat in the eggs, salt, and pepper. Mix everything until smooth. Pour the contents of the form with the creamy egg mass.
  10. Send to an oven preheated to 180 degrees and bake for 30 minutes. Grate the cheese on a medium grater. Remove the casserole dish from the oven and sprinkle with grated cheese.
  11. Send the casserole to the oven for another 5-10 minutes, until golden brown. Let the cooked casserole with cauliflower, zucchini, and minced meat stand for 10-15 minutes to make it easier to transfer to plates.
