Ingredients

  • 1 small cauliflower, depending on size, a quarter to half a head
  • 4 radishes, depending on size
  • 3 spring onion (s)
  • 1 handful peas, fresh or frozen

For the dressing:

  • 2 tablespoon mayonnaise or salad cream
  • Seasonal herbs
  • salt and pepper
  • possibly paprika powder, noble sweet

Instructions

  1. Cut the cauliflower into small florets and blanch for 5 minutes, then rinse with cold water, the cauliflower florets should still be crisp. Cut the spring onions and radishes into slices.
  2. Mix the mayonnaise with the herbs. Season well with salt, pepper and possibly paprika powder.
  3. Add cauliflower, radishes, spring onions and peas to the bowl and mix with the dressing. Let it steep for an hour.
  4. The salad tastes best a day later, so it is ideal for preparation.
