Ingredients

  • 400 g cauliflower
  • 2 teaspoons salt
  • 2 tablespoon lemon juice
  • 250 g puff pastry, frozen
  • 100 g cooked ham, finely diced
  • 200 g cheese, Emmentaler (rated)
  • 1 tablespoon parsley
  • 4 thyme leaves
  • 3 egg (s)
  • 1 teaspoon Dijon mustard
  • 100 ml cream
  • 100 g crème fraîche
  • 2 pinches pepper

Instructions

  1. First preheat the oven to 210 degrees - then wash and clean the cauliflower and cut into florets. Cook in salted water with the lemon juice until firm to the bite. They should be soft but not crumble - then drain.
  2. Line a springform pan (diameter 26 cm) with puff pastry and pull up the edge.
  3. Spread the boiled ham on top and the cauliflower roses on top. Sprinkle with parsley and thyme as well as cheese and then season with the freshly ground pepper.
  4. Mix the eggs with the mustard, cream and creme fraiche. Then season with salt and pepper to taste. Distribute this mass evenly in the mold and then put it in the oven for approx. 30 - 40 minutes. If necessary, cover at the end of the cooking time so that the surface does not get too dark.
