Ingredients

  • 350 g celery, peeled and cut into small cubes
  • 50 ml cream
  • 50 ml milk
  • 50 g butter, brown
  • 1 pinch orange peel, grated
  • salt and pepper
  • Nutmeg, grated

Instructions

  1. Heat the cream with the milk in a saucepan, add the celery cubes and cook for approx. 20 minutes with the lid closed. Take out the celery and puree with a blender, adding as much cooking liquid as you need and stirring in the brown butter. Season to taste with salt, pepper, nutmeg and orange zest.
