Ingredients

  • 500 g salmon, (sushi quality)
  • 1 cup lemon juice, made from fresh lemons
  • 1 red pepper (s)
  • 1 bell pepper (s), green
  • 2 onions)
  • 1 bunch coriander, fresh
  • salt and pepper
  • 3 tablespoon olive oil

Instructions

  1. Prepare the salmon by removing all bones and cutting into 0.5 cm pieces. Mix with the lemon juice and let sit in the refrigerator for 15 minutes.
  2. In the meantime, the peppers are cut into very small cubes, the onions are chopped into cubes or cut into very fine rings, the coriander is also very finely chopped. Mix everything with the salmon and let rest in the fridge for 1 hour. Before serving, mix in the salt and pepper to taste and the olive oil.
  3. Very nice light summer dish. White bread and cold white wine are served with it.
