Ceviche Recipe – with Tiger Milk

Ingredients

Tiger milk:

  • 120 g root celery
  • 20 g fresh ginger
  • 15 g hot fresh pepper (chili)
  • 180 g white fish (e.g. cod)
  • 40 g garlic
  • 120 g onions
  • 10 limes
  • 250 g fish broth
  • 250 g ice cubes

Ceviche:

  • 1 ear of corn
  • 1 sweet potato
  • 1 red onion
  • 6 sprigs of cilantro
  • 700 g fish fillet with white meat (without bones and skin)
  • 200 g squid (peeled)

Instructions

Tiger milk:

  1. Wash vegetables, peel and chop onion, garlic, celery, and ginger into small cubes, chili into rings.
  2. Squeeze the limes – you need 250 ml of juice.
  3. Mix all products and leave to marinate for 3 hours.
  4. In a mixer, grind in mashed potatoes (no longer than 10 seconds) and strain through a fine sieve. Remove foam.
  5. Keep in the cold.

Ceviche:

  1. Remove the corn kernels from the cob with a knife.
  2. Blanch in boiling water for 5 minutes and drain in a colander.
  3. Peel and dice the sweet potatoes.
  4. Boil for 5 minutes and drain in a colander.
  5. Crush with a crush.
  6. Peel the onion and cut into very thin rings.
  7. Remove the leaves from the cilantro.
  8. Chili cut into thin rings. Fish
  9. Cut fish and squid into 1 cm cubes.
  10. Put fish, squid, and chili in a metal bowl and season with salt.
  11. Pour over tiger milk.
  12. Put the bowl on ice for 3-4 minutes.
