Champignons Stuffed with Smoked Chicken Salad

I think that many people, when they hear β€œstuffed champignons”, imagine a hot appetizer with melted cheese. But in the summer, hot dishes are less popular, but you still want stuffed mushrooms. πŸ™‚ Why not stuff the mushrooms with summer salad with smoked chicken and vegetables? You will get a delicious cold appetizer, which can be served both for a festive table and a family dinner.

Ingredients

  • Champignons (large) – 300 g
  • Smoked chicken fillet – 70 g
  • Cucumbers – 50 g
  • Tomatoes – 50 g
  • Mayonnaise – 1-2 teaspoon
  • Salt to taste
  • Ground paprika – 1 tbsp
  • Dried oregano (optional) – 1 pinch
  • Vegetable oil – 1 tablespoon

Directions

  1. We prepare products.
  2. Wash the mushrooms thoroughly and remove the legs. Next, you need to prepare the mushrooms for stuffing. You can boil them in salted water or bake them in the oven. If you are not an opponent of raw mushrooms, then they do not need to be cooked.
  3. I will bake. To do this, sprinkle the mushrooms with a pinch of salt, paprika and pour in vegetable oil. We distribute all the spices with our hands.
  4. We spread the mushrooms on a baking sheet. (I used the bottom of a split form, covering it with foil, so the mushrooms will bake evenly on all sides.)
  5. We bake the mushrooms in the oven at 180 degrees for 10 minutes. Then cool slightly.
  6. A lot of juice is released during baking, it must be drained.
  7. Let’s start preparing the salad. Peel the cucumber and cut into small cubes.
  8. Cut the tomatoes into slices, remove the seeds and cut off the skin. Chop finely.
  9. Cut the smoked chicken breast in the same way.
  10. Mix all the chopped salad ingredients.
  11. Add salt on the tip of a knife and mayonnaise to a salad of tomatoes, cucumbers and smoked chicken breast. If desired, you can add spices to taste or fresh herbs. I added a pinch of dried oregano.
  12. We mix.
  13. Stuff the champignons with salad with chicken and vegetables.
  14. We serve stuffed mushrooms right after cooking.
