Chanterelle Cutlets Ingredients

  • Chanterelle mushrooms – 150 g
  • Onions – 40 g (0.25 pcs.)
  • Fresh dill – 3 branches
  • Egg (small) – 1 pc.
  • Semolina – 2 tbsp
  • Salt to taste
  • Ground black pepper – to taste
  • Bread crumbs – 3 tbsp
  • Vegetable oil (for frying) – 2 tbsp

Chanterelle Cutlets Instructions

  1. Sort chanterelle mushrooms to remove any debris, wash, and pat dry.
  2. Peel and chop onion. Rinse and chop fresh dill finely.
  3. Add chanterelles, onion, and dill to a blender and blend until completely smooth.
  4. Transfer the mixture to a bowl and stir in the egg until well combined.
  5. Add semolina and stir until evenly mixed.
  6. Let the mixture sit for 10 minutes for the semolina to absorb liquid, then season with salt and pepper to taste.
  7. Divide the mixture into equal portions, shape each into a cutlet, and coat with breadcrumbs.
  8. Heat vegetable oil in a frying pan over medium-high heat until shimmering (approximately 180°C / 350°F).
  9. Place the cutlets in the hot oil and fry for 7 minutes until golden brown.
  10. Flip and fry for 7 minutes on the other side until golden brown.
  11. Transfer to a serving plate and serve hot.
