Ingredients

  • 400 g flour
  • 0.75 ¾ pack baking powder
  • 250 grams sugar
  • 5 egg (s)
  • 125 g butter
  • 1 can apricot (s) (drained weight 480 g)
  • 500 g quark (20% F.i.Tr.)
  • 1 packet custard powder (vanilla)
  • 1 lemon (s) - zest, grated
  • Powdered sugar as desired

Instructions

  1. Mix the flour and baking powder and knead with 200 g sugar, 2 eggs and the butter. Chill the dough for 30 minutes.
  2. Drain the apricots. Mix the quark, pudding powder, lemon peel, 50 g sugar and 3 eggs.
  3. Line a springform pan (26 cm) with baking paper. Pour 2/3 of the shortcrust pastry into the pan and press down. Spread the quark mixture on the dough and place the apricots on top of the quark mixture. Knead the remaining dough until crumbly and distribute the crumble evenly on the apricots.
  4. Bake the cake in a preheated oven at 200 degrees for about 45 minutes. Remove the cake, let it cool and dust with powdered sugar if you like.
