Ingredients

  • 250 g puff pastry, frozen
  • 400 g kohlrabi, more tender
  • sea-salt
  • 200 g cheese, (raclette)
  • 250 g cream
  • 4 egg yolks
  • Pepper, whiter
  • Butter for the molds
  • possibly nutmeg

Instructions

  1. Thaw the puff pastry completely. Butter a baking dish, rinse it with cold water, and place the pastry in the dish.
  2. Wash and clean the kohlrabi. Halve it and cut into slices.
  3. Bring a pot of salted water to a boil. Blanch the kohlrabi slices for 1 minute. Drain and rinse with cold water.
  4. Arrange the kohlrabi slices on the pastry and sprinkle the chopped cheese over them.
  5. Whisk together the cream, egg yolks, salt, white pepper, and nutmeg if using. Pour the mixture over the kohlrabi and cheese.
  6. Bake in a preheated oven at 200°C (392°F) for 18–20 minutes until the top is golden.
