Ingredients

  • 500 g potato (s), (floury)
  • 100 g feta cheese, aed Mancheo or oat cheese)
  • 4 spring onions, finely chopped
  • 1 teaspoon, heaped thyme, freshly chopped
  • 1 egg (s), whisked
  • 1 tablespoon lemon juice
  • salt and pepper
  • Flour, for dusting
  • 4 tablespoon olive oil, (for frying)
  • Chives, fresher

Instructions

  1. Cook the potatoes in their skins for 25 minutes. Drain and peel off the skin. Put the potatoes in a bowl and mash or mash well.
  2. Add spring onions, cheese, thyme, egg and lemon juice and season with salt and pepper. Mix everything well, cover and place in the refrigerator for 1 hour.
  3. Put the flour on a plate. With a teaspoon, shape small portions between the palms of the hands into walnut-sized balls and flatten them lightly with your hand.
  4. Heat the oil in a pan. Roll the cookies in flour and fry until golden brown on both sides. Drain on kitchen paper. Garnish with chives and serve.
  5. A perfect accompaniment to light vegetable dishes.
