Ingredients

  • 50 g butter
  • 50 g flour (wheat flour)
  • 250 ml milk
  • 200 g mountain cheese, rated
  • 4 egg yolks
  • salt
  • pepper
  • Nutmeg, grated
  • 4 egg whites
  • 2 red pepper (s)
  • 2 bunches chives
  • 300 g double cream cheese
  • Cayenne pepper

Instructions

  1. Melt the butter in a saucepan for the dough. Add flour and sauté until golden. Deglaze with milk and bring to the boil briefly. Then melt 150 g of cheese in it.
  2. Stir the egg yolks into the milk and cheese mixture, season the mixture with salt, pepper and nutmeg.
  3. Beat the egg whites until stiff and fold in. Spread the dough on a baking sheet lined with baking paper and smooth it out.
  4. Bake in the preheated oven at 180 ° C for 15 minutes.
  5. Let the sheet of dough cool slightly.
  6. For the filling, halve the paprika, remove the stalk, core and cut into small cubes. Cut the chives into small rolls.
  7. Mix the cream cheese with paprika and chives and season with salt, pepper and cayenne pepper.
  8. Halve the cheese dough crosswise, brush each with the cheese and paprika mixture. Roll up with the baking paper into two small roulades. Sprinkle the roulades with the rest of the cheese and gratinate briefly under the grill.
  9. Serve the roulades cut into slices.
