Ingredients

  • 2 turkey schnitzel, 150g each
  • 1 tablespoon mustard, medium hot
  • salt
  • pepper
  • 2 slices ham, Black Forest
  • 2 slices cheese, butter cheese
  • 0.5 ½ pot basil
  • 1 tablespoon clarified butter
  • 75 ml apple juice
  • 1 tablespoon crème fraîche
  • 1 teaspoon sauce thickener, lighter

Instructions

  1. Beat turkey schnitzel very thinly or have the butcher cut thinly for roulades.
  2. Brush the turkey schnitzel with mustard, season with salt and pepper. Place 1 slice of ham and cheese on each of the schnitzel. Pluck the basil leaves and spread on top, some set aside for decoration. Roll up the schnitzel and secure with a wooden skewer.
  3. Fry the rolls in hot clarified butter for about 5 minutes. Pour in 50 ml apple juice, cover and simmer over low heat for 15 minutes. Remove turkey rolls, keep warm. Add the rest of the apple juice to the meat stock, stir in the creme fraîche, add the sauce thickener to the hot liquid, season with salt and pepper. Arrange the cheese rolls with the sauce, sprinkle with basil leaves.
  4. You can also serve an apple gratin or the usual side dishes such as rice, potatoes or pasta.
