“Cheeseburger” of Croutons with Fried Eggs Instructions

  1. Cut circles from bread slices using a ring cutter or similar tool. Heat 1-2 tbsp vegetable oil in a pan over medium heat. Brown bread circles 2-3 minutes per side until golden, then set aside.
  2. Season the minced pork and beef mixture with salt and pepper and mix thoroughly.
  3. Form two cutlets from the meat mixture, flattening them slightly if desired. Add the remaining 2-2.5 tbsp vegetable oil to the pan and heat over medium-high heat.
  4. Cook the cutlets 7-8 minutes per side until the internal temperature reaches 71°C (160°F).
  5. While the meat cooks, cut two circles from the tomato and cut the cheese in half lengthwise.
  6. Spread mayonnaise on two toasted bread circles and place one hot cutlet on each.
  7. Top each cutlet with one cheese slice to allow it to melt from residual heat, then place one tomato circle on top.
  8. In the same pan (still hot from cooking the meat), crack both eggs and season with salt. Cover with a lid and fry over medium heat until the egg whites are set but the yolks remain runny, about 3-4 minutes.
  9. Place one fried egg on top of the tomato on each sandwich, then cover with a remaining toasted bread circle and serve.
