Cheesecake with Poppy Seeds and Marzipan

There are not many recipes that you fall in love with at first sight. But this one is one of those. It has everything that I like – delicate cream cheese, poppy seeds, candied fruits. Try making a cream cheese cheesecake with poppy seeds, marzipan, and light lemon sourness, you will love.

Ingredients

  • Sugar shortbread cookies (with baked milk) – 80 g
  • Butter – 40 g
  • Sugar – 40 g
  • Cream cheese – 200 g
  • Sour cream – 2 tbsp
  • Chicken egg – 1 pc.
  • Marzipan – 50 g
  • Poppy – 1 tbsp
  • Lemon juice – 1 teaspoon.
  • Candied fruits – 1 tbsp (for decoration)
  • Fresh mint – 2 sprigs (for decoration)

Directions

  1. Prepare all the ingredients for the cheesecake, because it’s convenient when you don’t have to slam the refrigerator door and wash your hands to open it every time.
  2. Use a blender or rolling pin to grind the cookies into small crumbs.
  3. Add the softened butter to the cookies and mix thoroughly.
  4. In a split pan (my pan is 19 cm in diameter, but you can use a smaller pan to make the cheesecake taller) place the cookie cheesecake base and flatten it with the back of a spoon. Put in the refrigerator for a while.
  5. Meanwhile, combine the cream cheese with sugar, whisk or whisk or blender until smooth.
  6. Grate marzipan on a coarse grater. If you couldn’t buy marzipan, you can make it yourself (see the recipe link in the product list).
  7. Add sour cream, an egg to the cheese beat well again with a whisk.
  8. Stir in the poppy seeds, grated marzipan, and lemon juice into the cheesecake filling.
  9. Remove the cookie cutter from the refrigerator and pour the cheese mass onto the base.
  10. Place the cheesecake pan in an oven preheated to 160 degrees for about 40 minutes. Then turn off the oven and let the cheesecake cool in it.
  11. Place in refrigerator overnight. Garnish the cheesecake with candied fruits and fresh mint in the morning.
  12. Serve cheesecake with poppy seeds and marzipan with a fragrant cup of brewed coffee. The day that starts like this will definitely not be bad!
