Today, for a while, we forget about the classic recipe with all its nuances – we do without heat treatment and form a dessert using gelatin.
Cheesecake without baking, like its original prototype, is prepared with cream cheese and cream. From below we lay a thin crust of cookies crushed and mixed with melted butter. We ram the moistened crumbs and instantly get a base cake under a delicate, unsteady layer. Next, we mix all the other components, combine with gelatin, put cookies on a layer, and send them to the refrigerator until they solidify. That’s the whole no-bake cheesecake recipe! Minimum manipulation and no complicated molding!

Melt the butter and pour it over the sand crumbs, add the melted butter to the liver Stir thoroughly so that the whole dry mixture is evenly saturated with the oily liquid.
We place a culinary ring or aside from a split form on a plate. To make the cheesecake appetizing and not very low, we make a small dia – 18-20 cm (for a larger container, it is better to increase the proportion of products). Pour out the oiled crumbs and distribute them inside the ring, evenly filling the entire area. We level the base with a spoon or the bottom of a glass.

Pour in the cream and stir the cream with a whisk until smooth. Add the cream to the cream cheese
Warm up the gelatin. To do this, put the bowl with the already swollen mass in another larger dish. Pour hot water into the lower container. Stirring actively, we achieve complete dissolution of the powder.
You can choose another heating method, for example, “water bath”. The main thing is not to allow the gelatin to boil, otherwise, its gelling properties will be killed! Mix gelatin in a water bath
After cooling to a slightly warm state, pour in the dissolved gelatin in a thin stream to the buttercream. Diligently and continuously stir the mass with a whisk so that the gelatin is evenly distributed. As a result, you should get a completely homogeneous and smooth cream similar in consistency to sour cream. Pour the gelatin into the buttercream
We spread the jelly mixture on the chilled biscuit crust, level the surface with a spoon.
Then, holding the ring with our hands, we scroll the plate several times without lifting it from the table – this way the surface of the cheesecake will become even smoother and more even. We remove the formed dessert in the refrigerator until the cheese-cream layer hardens. On average, this takes 3-4 hours, but the time depends on the strength of the particular gelatin. Put the chilled cream on the cake.
