How to make a delicate curd cheesecake without baking at home? Very simple!
Ingredients
1 layer – cake:
Oatmeal cookies – 300 g
Butter (82%) – 200 g
2nd layer – curd:
Cottage cheese – 800 g
Sugar – 150 g
Sour cream (20%) – 100 g
Gelatin – 15 g
Water – 50 ml
3rd layer – jelly:
Cherries (fresh or frozen) – 600 g
Sugar – 100 g
Gelatin – 10 g
Directions
Grind the cookies into crumbs with a blender.
Add butter at room temperature and mix well.
The ingredients that we have indicated are based on a detachable form with a diameter of 24 cm. We line the bottom of the form with parchment. Distribute the mixture of cookies and butter evenly over the shape.
Tamp so that the base of the future cake is dense. Send the form with the finished cake to the refrigerator.
We start preparing the curd layer. Rub the cottage cheese through a sieve so that it is more fluffy and the cake has a delicate texture.
Add sugar and sour cream. Stir well.
Dissolve gelatin in warm water, add to the curd mass and mix.
Put the second layer in the mold, distribute evenly and return to the refrigerator.
Combine the berries with sugar and gradually heat them until they start juicing. By the way, if you don’t have cherries on hand, you can make jelly from other berry juice. For example, from raspberries or currants. Drain the juice and mix it with the dissolved gelatin. Gelatin can be taken in the form of plates or powder.
When the juice cools a little, pour it onto the frozen curd mass. You can add fresh blackberries to this layer and thus decorate our cake. Send the cake to the refrigerator for a few hours.
A little tip: to make a cake it is better to take a split from, and when you take out the cake, wrap it with a towel soaked in hot water for a minute, so the jelly will better move away from the walls and the cake will not lose its original appearance.
Delicious and light cheesecake are ready, and you didn’t even have to turn on the oven!
