Try this summer-style light and cooling cherry cheesecake that doesn’t require baking! It will appeal to adults and children, and will also become a favorite dessert of the summer table.
Ingredients
Cookies 100 g
Butter 50 g
Cinnamon 1 teaspoon
Cherry 225 g
Curd 450 g
Sugar 100 g
Water 150 ml
Gelatin 30 g
Cream 20% 120 g
Directions
Grind the cookies with butter and put them in the mold. We tamp.
Grind cottage cheese and sugar in a blender.
Cooking cherry jelly: soak 10 g of gelatin in 70-80 ml of cold water. When the gelatin swells, add 20 ml of hot water and, stirring, heat in a water bath to 50-60 °. When dissolved, stirring, cool to 40 °, add the juice of half a lemon.
Whisk together gelatin, curd mass, cream, and vanillin. We distribute everything over the cake.
We put it in the refrigerator for 1 hour.
When the curd layer hardens, layout the cherries and fill them with cherry jelly (jelly is prepared according to point 3, but instead of water we use cherry juice, add sugar and lemon juice to it). We put it in the refrigerator for 1 hour.
