Ingredients

  • 350 g flour
  • 275 grams sugar
  • 375 g butter
  • 0.5 tablespoon ½ cocoa powder
  • 300 g sour cherries
  • 1 packet vanilla sugar
  • 1 pinch (s) salt
  • 4 egg (s)
  • 500 g quark, (low-fat quark)
  • 1 pck. Custard powder, vanilla flavor (for /2 l milk for boiling)
  • 4 tablespoon semolina
  • 50 g chocolate sprinkles
  • Fat and flour for the mold

Instructions

  1. Knead the flour with 125g sugar, 250g soft butter and cocoa powder to make crumble. Grease a springform pan (26cm) and dust with flour. Put half of the crumble in the mold and press firmly.
  2. Wash, stem and stone the cherries. Mix 125g of cold butter in pieces with 150g of sugar, 1 packet of vanilla sugar and 1 pinch of salt until creamy.
  3. Separate eggs. Stir the egg yolks into the fat and sugar mixture. Stir in the quark, pudding powder and semolina. Beat egg whites until stiff. Carefully fold ice snow, cherries and chocolate sprinkles into the curd mixture. Spread the quark mass on the crumble base. Spread the remaining crumbles on top. Bake in a preheated oven at 200 ° C for about 1 hour.
  4. If necessary, cover the cake halfway through the baking time. Remove the cake from the edge of the springform pan and allow to cool on a wire rack.
