Ingredients

  • 2 tablespoons oil
  • 1 onion (s), finely chopped
  • 1 kg red cabbage, cut into fine strips
  • 2 apples, peeled and diced
  • 10 juniper berries, squeezed
  • 1 bay leaf
  • 400 ml cherry juice
  • 150 g cranberries, fresh
  • 100 ml maple syrup
  • salt and pepper

Instructions

  1. Braise the onion in the hot oil. Add red cabbage and apple. Fry for about 10 minutes. Salt and pepper. Add the juniper berries and bay leaf. Deglaze with the cherry juice. Let simmer for 60 minutes. Stir occasionally.
  2. Add the cranberries and simmer for another 20 minutes. Season to taste with maple syrup, salt and pepper.
