Instructions

  1. Melt the butter and chocolate in a saucepan on the lowest setting, stirring constantly, and remove them from the stove. Let cool down briefly.
  2. Beat eggs, vanilla sugar, salt and sugar for at least 5 minutes until they are nice and creamy. Now carefully add the cocoa butter mixture and continue beating briefly on the lowest setting (it would be best to use a spoon here).
  3. Finally, carefully fold in the flour that was mixed with the cocoa powder (stir only until the flour-cocoa mixture has mixed well with the dough and there are no more lumps).
  4. Pour the dough into a very well greased brownie pan (approx. 20 x 30 cm, can vary).
  5. Now put the form in the preheated oven and bake at 175 ° C top / bottom heat or 160 ° C fan for about 20 - 25 minutes. (Please be careful here, because every oven heats differently. The best way to see when the brownies are ready is by testing them with chopsticks. If there is still a bit of batter stuck to the chopsticks, they are done)
  6. Take the pan out of the oven at the end of the baking time and let it cool, as the brownies are still relatively soft right after baking. Cover with a glaze if you like.
  7. Cut into squares and serve.
  8. You should use the chocolate you like. The more bitter the chocolate, the higher the sugar content should be. That means with 85% chocolate you should use a good 250 g of sugar so that it is not too bitter.
  9. If you like it bitter, you can also use just 150-200 g of sugar. I like it sweeter, so I use milk chocolate and 200g sugar.
  10. The fudge brownies are particularly sweet, juicy, sticky and extremely chocolaty!
