Ingredients

  • 1 large egg (s)
  • 180 ml milk, e.g. cow`s milk, almond milk or cashew milk
  • 2 tablespoon chia seeds
  • 1 tablespoon agave syrup or liquid honey
  • 2 pear (s), ripe
  • 85 g whole wheat flour
  • Pinch salt
  • 2 teaspoons baking soda
  • 2 tablespoon coconut oil or coconut fat, melted
  • Coconut oil for baking

Instructions

  1. Beat the egg in a bowl. Add milk, chia seeds and agave syrup and stir. Let it rest for 10 minutes so that the chia seeds can absorb some liquid.
  2. Core the pears, if you like, peel them, grate and add. Finally, mix in the dry ingredients in a bowl and stir in. Add the coconut oil and make a smooth batter.
  3. Heat 1 - 2 teaspoons of coconut oil in a pan and bake pancakes. Each side takes about 3 - 4 minutes.
  4. Pears cut into pieces and caramelized in a little honey in a pan are just as good as a dollop of yoghurt or quark as a topping.
