Ingredients

  • 1 cup coconut milk
  • 1 cup applesauce, or 2 small apples
  • 2 small apples
  • 3 tablespoon chia seeds
  • 1 teaspoon cinnamon, depending on your taste
  • 0.5 teaspoon ½ nutmeg
  • vanilla sugar

Instructions

  1. Everything together either with the mixer, a hand blender or just stir vigorously.
  2. If you don`t have applesauce, first puree 2 - 3 small apples and then use as applesauce.
  3. Let the pudding steep for 30 minutes, preferably in the refrigerator, so that the chia seeds can expand and create a pudding-like substance. Stir it a few times.
  4. Then you can either garnish it with nuts and / or apples or eat it like that.
  5. It fills really well, so this recipe is enough for 2-3 servings.
  6. By the way, I pureed fresh apples. You can see the oxidation in the picture, but I don`t think that doesn`t bother the taste.
