Instructions

  1. Heat fat in a skillet over medium-high heat. Season the chicken breasts with salt and pepper, then brown on all sides for about 2-3 minutes per side until golden.
  2. Cut the tomatoes and mozzarella into slices.
  3. Transfer the chicken breasts to a baking dish, arrange the tomato slices and mozzarella on top, then sprinkle with salt, pepper, and basil.
  4. Bake in a preheated oven at 200°C (392°F) with top/bottom heat for 10 minutes or until the cheese has melted and the chicken reaches an internal temperature of 74°C (165°F).
  5. Serve with fresh ciabatta and salad.
