Ingredients

  • 4 chicken breast fillet (s)
  • 1 tablespoon oil
  • 4 slices cooked ham
  • 1 can pineapple, pieces
  • 4 slices cheese (Gouda)
  • 500 ml chicken broth
  • 1 tablespoon cream cheese
  • 2 teaspoons curry powder
  • salt and pepper
  • some cornstarch to tie

Instructions

  1. Season the 4 chicken breast fillets with salt, pepper, and curry powder.
  2. Heat 1 tablespoon of oil in a pan over medium-high heat. Fry the seasoned chicken for 3-4 minutes per side until golden brown (do not cook through). Transfer to a baking dish.
  3. Top each chicken fillet with pineapple pieces, a slice of ham, and a slice of cheese.
  4. Bake in a preheated oven at 200°C (392°F) for 12-15 minutes until the cheese melts and turns light brown and the chicken reaches 74°C (165°F) internally.
  5. While the chicken bakes, pour the chicken broth into the same pan over medium heat, scraping up any browned bits from the bottom. Stir in the cream cheese until smooth. Season with curry powder, salt, and pepper to taste.
  6. If desired, stir cornstarch mixed with water into the sauce to thicken it. Simmer for 1 minute more.
