Ingredients

  • 1 pack country potatoes, frozen, 600 gr
  • 500 g chicken breast
  • 250 g cherry tomato (s)
  • 1 bunch spring onion (s)
  • 3 tablespoon pesto, red from the glass
  • 30 g sesame seeds
  • salt and pepper
  • chili

Instructions

  1. Preheat the oven to 200°C (392°F).
  2. Thaw the frozen country potatoes (roughly 10-15 min while preparing other ingredients).
  3. Wash and pat dry the chicken breast, then cut into larger pieces.
  4. Wash the cherry tomatoes and leave whole.
  5. Clean the spring onions and cut into 2 cm pieces.
  6. In a large bowl, combine the chicken breast, thawed potatoes, cherry tomatoes, spring onions, red pesto, and sesame seeds.
  7. Season with salt, pepper, and chili to taste.
  8. Transfer everything to a baking sheet.
  9. Bake for 15 minutes at 200°C (392°F).
  10. Flip or stir the contents of the baking sheet.
  11. Bake for another 15 minutes until the chicken reaches 74°C (165°F) internally.
