Chicken Chakhokhbili (Chakhokhbili Recipe)

As the Georgians say, there are so many villages in Georgia, there are so many chakhokhbili recipes. And every chef claims to have the best recipe. So, we have the most delicious recipe. It was brought from the very heart of Georgia.

Ingredients

  • Chicken – 1 pc.
  • Medium tomatoes – 6 pcs.
  • Medium onions – 6 pcs.
  • Dry white wine – 100 ml
  • Plum – 200 g
  • Garlic – 5 cloves
  • Butter – 30 g
  • Cilantro – 100 g
  • Hot red pepper – 1/2 teaspoon
  • Utskho-suneli – 1 tbsp
  • Mix of 5 peppers
  • Vegetable oil
  • Salt

Directions

  1. Cooking chicken – removing excess fat and tail. We leave the fat for cooking onions. Cut the chicken into medium-sized pieces.
    (Georgian chefs divide the chicken into 17 parts for chakhokhbili.)
  2. In tomatoes, remove the stalk, make shallow cross-shaped cuts around the fruit, string it on a fork and keep it in very hot water for 30-40 seconds. Remove the skin and cut the fruit into medium cubes.
  3. Divide each onion in half and cut the onion into thin slices.
  4. In a preheated pan, melt the chicken fat and add 1 tablespoon. a spoonful of vegetable oil. We spread the chopped onion, salt a little. Fry the onion until golden brown, stirring constantly, for 4-5 minutes. Add butter, stir and turn off the stove.
    Remove the remaining pieces of chicken fat.
  5. Pour 200 ml of water into a saucepan, bring to a boil and put plums. Cook over low heat with the lid closed for 8-10 minutes. Then we wipe through a sieve and add the water in which they were cooked to the resulting puree.
  6. Cut the garlic into thin slices. Finely chop the cilantro greens (leaves and soft stems), pour vegetable oil into a heated cauldron and add a pinch of coarse salt to the bottom. First of all, we put the chicken pieces on the bone. Do not close the lid, fry for 4-5 minutes on each side until golden brown, turn the pieces over, salt a little and pepper with a mixture of peppers.
  7. Add breast fillet, fry a little together with other pieces for another 3-4 minutes, add a little salt and pepper, pour white dry wine into a cauldron with chicken and reduce the power of the stove for simmering. Simmer chicken in wine for 3-4 minutes with the lid closed.
  8. Add the prepared tomatoes, mix everything thoroughly, cover with a lid, add a little power to the stove. Simmer for 8-10 minutes, then add 1.5 tablespoon. utskho-suneli spoons, mix.
  9. Add the prepared onion, stir again, cover and simmer for 2 minutes. Add salt to taste and puree from the plums, mix, cover and simmer for another 6-7 minutes. Add chili and salt if necessary.
  10. We also send prepared cilantro and garlic there. Turn off the stove. Mix everything thoroughly, cover with a lid and let stand for 10 minutes.
