Ingredients

  • 4 large skinless chicken breasts
  • 5 tablespoon olive oil
  • 1 large onion (s), finely chopped
  • 7 cloves garlic, finely chopped
  • 2 lemon (s) (organic), the zest and juice it
  • 4 tablespoon parsley, smooth, freshly chopped
  • some parsley for garnish
  • salt and pepper

Instructions

  1. Cut the chicken breasts widthways into very thin pieces.
  2. Heat 5 tablespoons olive oil in a large pan over medium heat.
  3. Add the finely chopped onion and cook for 5 minutes until soft but not brown.
  4. Add the finely chopped garlic and cook for 30 seconds.
  5. Add the chicken pieces to the pan and cook on medium heat for 5 to 10 minutes, stirring occasionally, until the chicken is cooked through (internal temperature 74°C / 165°F) and light golden brown.
  6. Add the lemon juice and grated lemon zest to the pan.
  7. Increase heat to medium-high and bring to a gentle simmer.
  8. Stir everything with a wooden spoon, then remove the pan from heat.
  9. Stir in the 4 tablespoons of freshly chopped parsley and season with salt and pepper to taste.
  10. Transfer the chicken mixture to a serving bowl while still hot.
  11. Garnish with the reserved parsley.
  12. Serve with the lemon wedges and bread.
