When you don’t really want to stand at the stove for a long time, but they ask for tasty things! I remember and prepare this recipe – fragrant, delicious rice with vegetables and also with chicken kebabs! I put all this in the oven in one go – and you’re done!
Ingredients
Chicken fillet – 2 pcs.
Kefir – 2 tbsp
Rice – 1 cup (180 g)
Zucchini – 1 pc.
Sweet pepper – 1 pc.
Tomatoes – 2 pcs.
Bulb onions – 1 pc.
Vegetable oil – 3 tbsp
Ground paprika – 1/2 teaspoon
Dried garlic – 1/2 teaspoon
or fresh garlic – 2 cloves
Curry mixture – 1/2 teaspoon
Salt to taste
Water – 2 cups (400 ml)
Directions
Cut the chicken breast into small pieces. Add kefir, paprika, 1 teaspoon of salt and dry garlic (or fresh garlic squeezed through a press). Also here – some vegetable oil (a couple of tablespoons). Stir and leave to marinate for 20-30 minutes.
During this time, we will prepare the vegetables. Lightly fry the onion, diced in a small amount of vegetable oil (until lightly golden).
We send zucchini, tomatoes and bell peppers, also cut into cubes, to the pan. Saute over high heat for a couple of minutes.
Summer vegetables are good! Now add the curry mixture and the washed rice. Stir, let the rice saturate with all the flavours (a few minutes). Salt.
Add two glasses of water and let the garnish boil.
We turn on the oven to heat up to 180 degrees. Cover the frying pan (mine has a removable handle) with foil. We make many small holes in the foil. Pieces of chicken are placed on skewers and distributed on the foil.
We bake chicken skewers and rice with vegetables in a preheated oven at 180 degrees for 40 minutes.
